    Vegan Blackberry Ice Cream

    This easy vegan blackberry ice cream is such a treat if you love fruit desserts. It can be done so quickly (made in under 30 minutes) and using only 4 simple ingredients (+ an ice cream machine)! The result is an ultra-creamy, fruit-filled ice cream that's perfect for the summer. 100% vegan and dairy-free.

    Since getting an ice cream machine, we cannot stop making vegan ice cream recipes at home! This vegan oreo ice cream, this vegan chocolate ice cream and this vegan matcha ice cream are some of our favorites, but we also love including fruit for a light and summer dessert, such as in this vegan blackberry ice cream!

    It is so easy to make, and you can enjoy this fresh homemade ice cream within 30 minutes, from start to finish. All you need are 4 ingredients and an ice cream machine!

    This dairy-free berry ice cream bursts with fruit flavor and is just perfectly sweet. Perfect frozen treat for the summer!

    🗒 Ingredient notes (+ substitutions)

    Showing are the ingredients needed to make vegan blackberry ice cream.
    • Coconut milk: use full-fat coconut milk that's unsweetened for the best result. I like the organic coconut milk from the brand Thai.
    • Blackberries: choose plump and sweet blackberries for the best flavor. Can be swapped for other berries, especially blueberries.
    • Sugar: I used cane sugar, but you can use regular white sugar. I do not recommend swapping for maple syrup or brown sugar.
    • Vanilla: optional, you can skip it if you don't have any.

    🍽 How to make vegan blackberry ice cream

    Step 1: Add the coconut milk, sugar, blackberries and vanilla extract to your blender.

    Step 2: Blend until smooth and creamy.

    Step 3: Pour the creamy mixture into your frozen ice cream machine container.

    Step 4: Churn until desired consistency, about 20-30 minutes. Enjoy right away or transfer to the freezer for later.

    💡 Helpful tips

    • Be sure to freeze your ice cream machine container before using! You can freeze it the night before, or do like me and keep it at all times in your freezer so it is always ready to use.
    • If the ice cream is still a little too soft for your taste after churning for 30-35 minutes, then you can also transfer it to your freezer for an extra hour before enjoying it.
    • If your fruit isn't sweet enough or is too tangy, then you can add a little extra sugar.

    ❗️Storage tips

    This homemade blackberry coconut ice cream can be kept in the freezer for up to 2 weeks. If you store it for longer than that, the ice cream might start to create small crystals that will affect the overall texture. That being said, the ice cream is going to be good for up to 2 months if well covered.

    Just like store-bought ice creams, if not serving right away, then you might want to take the ice cream out of the freezer for a few minutes before serving so it is softer and easier to scoop.

    ❓ FAQs

    Can I make vegan blackberry ice cream without an ice cream machine?

    I like making ice cream without a machine (check out this coconut blueberry ice cream). It does not get as light and whipped as the ones made with a machine that churns the mixture while it freezes, but it still works.

    Can I use frozen blackberries to make blackberry ice cream?

    Yes! You can briefly thaw them so they blend more easily, but it should work just as well as using fresh berries!

    Is this blackberry ice cream gluten-free?

    Yes! All the ingredients are naturally gluten-free!

    Vegan Blackberry Ice Cream

    Equipment

    • Blender
    • Ice cream machine
    • Spatula/mixing spoon
    • Measuring cups and spoons

    Ingredients
      

    • 15 oz coconut milk - unsweetened and full-fat
    • 1 cup fresh blackberries - you can also use frozen blackberries
    • ⅓ cup sugar - I used cane sugar, regular white sugar works too
    • 1 tsp vanilla extract

    Instructions
     

    • Add the coconut milk, blackberries, sugar and vanilla extract to a blender, then blend until smooth and creamy.
    • Pour the mixture into your frozen ice cream machine container, then churn for about 25 minutes or until the desired consistency. Enjoy!
