    2-Ingredient Olive Oil Caramel (Vegan, No Cook)

    This ultra-easy 2-ingredient olive oil caramel sauce is the best last-minute sweet topping you can whip up in less than 5 minutes, and without any cooking or fancy equipment. Pour over ice cream, cake, drinks or your morning pancakes and enjoy the light sweetness plus a nice boost in healthy fats.

    This Viral olive oil caramel isn't really a recipe, but such a great trick in the kitchen when you need a vegan no-cook caramel sauce within 5 minutes.

    We love caramel sauces, like this peanut butter caramel or this tahini caramel, or even this healthier date caramel, but this recipe is even quicker and easier.

    It is made using 2 ingredients only and the caramel is done all in one bowl without any fancy equipment. It's the perfect last-minute sweet sauce to pour over coconut cookie and cream ice cream, sweet loaves (we love it especially over this vegan date cake and this 4-ingredient banana bread) and in drinks!

    🗒 Ingredient notes (+ substitutions)

    • Olive oil: choose a high-quality olive oil (extra virgin) if possible and taste it first; it should have a smooth flavor that you like as is. This is a very simple recipe and the caramel will have a better flavor with a better quality product! I like the brand Graza (good flavor and a little more budget-friendly), but other good brands include Brightland and Kosterina.
    • Maple syrup: just like for the olive oil, choose a strong-flavored maple syrup of good quality for the best result (no maple-flavored processed syrups, choose 100% maple syrup).

    ➡️ Add a pinch of salt if needed to balance the flavors and use coarse salt for a little crunch!

    📝 How to make olive oil caramel

    Step 1: In a medium bowl, add the olive oil and maple syrup.

    Step 2: Whisk vigorously until combined and whipped, it should turn into a thicker and silky caramel sauce.

    💡 Helpful tips

    • For a thicker caramel-like texture, be patient and whisk vigorously for a few minutes to create an emulsion. You can also use a high-speed blender, which can whip the mixture and help trap the air within the oil!
    • The oil and syrup will separate fairly quickly after sitting still, so make sure to shake well just before pouring the caramel to recreate the silky consistency.

    🍽 Serving suggestions

    Use this healthier caramel sauce the same way you would use any caramel sauce. Our favorite pairing includes:

    • Ice cream: we love it over this cookie and cream coconut ice cream
    • Cake: especially this 4-ingredient banana bread!
    • Drinks: such as latte or milkshakes
    • Pancakes: try it over this banana sourdough pancake recipe

    ❗️ Storage tips

    Keep the caramel sauce at room temperature for up to 2 days or in the fridge for up to 10 days. The olive oil tends to firm up if colder, which can help make for a thicker caramel. If needed, take out the sauce about 10-20 minutes before stirring.

    Don't forget to shake well before serving, the oil and maple syrup tend to separate after resting for a while.
