This mango cucumber smoothie is super creamy, refreshing, hydrating and packed with healthy ingredients. Can be done in 5 minutes and makes for a perfect breakfast, snack or light dessert for the summer. 100% dairy-free and vegan.
This ultra-refreshing mango cucumber smoothie is just what you need this summer. It is unbelievably creamy, thanks to the addition of dairy-free yogurt, and the combination of cucumber, fresh mint and zesty lime juice gives it an amazing cooling effect. Perfect hydrating frosty drink to enjoy on a hot day!
As a side note, this is a no-banana smoothie recipe, creating a result that's not too sweet yet still very creamy, fruity and velvety, thanks to the frozen mango.
I have some fresh mango smoothie recipes on the blog for when they are super sweet and in season, such as seen in this mango boba smoothie. But for the rest of the year, I prefer using frozen mangoes since they are so convenient, easy to find and usually cheaper than fresh ones.
For example, I'll use frozen mangoes to make chocolate mango smoothies or mango cherry smoothies, which are some of my kids's favorites for their super sweet flavor. And this cooling frozen mango cucumber smoothie was such a treat, absolutely worth a try!
In this case, the frozen fruit helps compensate for the watery composition of the cucumber, giving the mixture such a wonderful thick texture.
And if you think that adding cucumber to smoothies is odd, think twice! Just like in this cucumber strawberry smoothie, cucumber adds hydration and a cool + fresh vibe that you will LOVE! And hiding veggies in smoothies is such an easy way to boost your diet with more nutrients (check out this banana carrot smoothie for another veggie-packed drink!).
This recipe is so easy and quick to make, and you can adjust the ingredients to your preference! All you need to do is throw everything in a blender and blend until smooth and velvety.
We love it for breakfast with toast (especially alongside this buckwheat bread!), but also makes for a yummy afternoon snack or light dessert that's satisfying but still healthy.
Let me know if you give it a try! ❤️

🗒 Ingredients you will need
(full details down below in the recipe card)
- Cucumber: I used half a English cucumber, they are easy to find in any grocery store. Clean well and keep the peel on for bonus nutrients!
- Mangoes: frozen mangoes work better for this recipe to give the smoothie a frosty effect and make the mixture thicker and creamier.
- Dairy-free yogurt: I used this plain cashew milk yogurt from Forager Project, and I recommend you use this one if possible. It has the best creamy texture and tangy flavor of all the plant-based yogurt I have tasted so far!
- Plant-based milk: I love the full-fat oat milk from Oatly for making drinks. It has a thicker consistency and a mild sweet flavor even without any added sugars.
- Lime juice: freshly squeezed lime juice is better than bottled juice. You can also use lemon juice if that's what you have.
- Mint: adds such a nice punch of fresh flavors, try not to omit it! You can start with only 2-3 leaves if you want to avoid an overpowering minty flavor, then add more as you wish.
🍴 How to make
(all the recipe details are down below in the recipe card)
Combine
In a blender, add the cucumber, milk, yogurt, lime juice, mango and mint.
Blend
Blend on high speed until smooth and creamy. Keep blending until there are no visible chunks of fruit or specks of mint.
If you need to, add a little extra milk, although the watery cucumber should make it easy to blend.
Adjust and serve
You can taste the mixture straight from the blender to adjust the flavor as you need. Then, pour into a large serving glass, add toppings if you want and enjoy with a straw!
💡Helpful tips
- Frozen mangoes work best than fresh ones in this recipe to give a thicker texture and a chilled result. If you only have fresh mangoes, then try to plan ahead and chop/freeze them the night before. If you must use fresh mangoes, then you might want to add a few ice cubes to the blender to make the smoothie colder.
- If you do not have a high-speed blender, then you might need to blend for a little longer to crush the frozen fruit and mint completely. Take a break or two to scrape the side and bottom to ensure that all the ingredients are blended.
- If using a garden cucumber, then you might want to remove the inside part that contains the large seeds. The peel can also be bitter on these larger cucumbers. If this is the case, then peel some off as well.
🍽 Serving suggestions
Try to keep your smoothie thick enough to be able to handle toppings, this makes for such a beautiful presentation. I like to use small garnishes that can go through my thick straw, such as:
- Chopped mango
- Hemp seeds
- Shredded coconut
- Chia seeds
This recipe can also be turned into a smoothie bowl. In that case, reduce or completely omit the amount of plant-based milk to keep the consistency even thicker and frostier. You are looking for a scoopable mixture. Then, transfer into a bowl and garnish with granola, seeds, fresh fruits or your favorite smoothie bowl topping. 📝 Variations
Here are a few variations you can try when making this smoothie:
- Protein-packed: if you want to boost the smoothie with more protein or turn it into a complete meal, then you can add some hemp seeds, protein powder or nut butter.
- Sweeter: This smoothie is sweet enough for our taste, but depending on how sweet the mangoes are, then you might want to add some maple syrup, Medjool dates or frozen banana.
- Green smoothie: for a green-rich smoothie that's loaded with antioxidants and vitamins, then add a handful of baby spinach or kale.
- Tropical: swap the regular plant milk for either coconut water or coconut milk for a delicious tropical twist.
