And there is nothing wrong with a plain bagel spread with hummus when you are hungry and need something fast. But there are endless ways to add more flavor and personalization to your sandwich in just a few minutes, so why not try something new?

The best part is that you can whip up these hummus bagel sandwiches within 5-10 minutes, just enough time to toast the bagel, chop a few veggies and layer everything. ✅ Choosing your bagels and hummus
For this recipe, I used sesame seed bagels from the store to make it easier. Everything bagels would be great too and add more savory flavors to your sandwiches. I have a recipe on the blog showing you how to make your own everything bagels from scratch that you might want to try. Homemade bagels are easier to make than it seem and so fun too!
As for the type of hummus, plain, garlic or lemon hummus would be amazing and pair well with any flavor shown in this recipe. You can also use flavored hummus if you prefer for more color and personalization. You can even make your own! Here are a few hummus recipes you can try:
#1: Hummus Bagel Sandwich with Summer Garden Veggies
This is the easiest and simplest of the options provided here. All you need are fresh veggies and ideally, some pickled onions for a punch of flavor. This sandwich bursts with fresh flavors and is packed with nutritious fiber and antioxidants from the vegetables.
What you will need

- Bagel + Hummus
- Fresh crunchy veggies: I used a mix of cucumber, carrots and purple cabbage.
- Sprouts: or leafy greens.
- Avocado: adds a nice rich and creamy texture, plus some bonus healthy fats to help keep you full longer.
- Red onion: I like pickled onions in sandwiches for that punch of tangy taste and added crunch. You can make your own pickled red onion super fast or get it at the store.
- Sesame seeds: add a nice crunch and extra nutrition.

Toast
Slice and toast the bagel.
Spread
Spread a generous amount of hummus on both sides.
Layer and serve
On one side, layer the sliced cucumber, shredded carrots, shaved purple cabbage, pickled red onion and sprouts. Sprinkle some black sesame seeds on both sides, close the sandwich and enjoy.
Pro tips
- Try to finely slice the carrots and cabbage so it is easy to eat. For the carrots, I like to shred them but for the purple cabbage, you can finely slice it using a sharp knife or even better, use a mandoline. You can also shave the cabbage using the shredder attachment on your food processor.
- More fresh veggie ideas include sliced red bell pepper, radishes, fresh tomatoes, shredded raw beets (check out this creamy beet sandwich!), sliced dill pickles and baby spinach.
#2: Mediterranean Hummus Bagel Sandwich
This version makes for an absolute treat that pairs perfectly with plain hummus. It calls for kalamata olives, roasted red pepper and balsamic glaze, which when combined, add a delicious Mediterranean zest to a simple hummus bagel sandwich.

- Bagel + hummus
- Roasted red pepper: I used jarred roasted red pepper for convenience. I love the roasted peppers from the brand 365 that I get at Whole Foods Market, but any brand will work. You can also make your own roasted red peppers, it is so easy! I show you how to roast red peppers in this vegan Mexican bowl recipe.
- Avocado: adds an extra rich texture and more healthy fats to keep your belly happy and full for longer.
- Olives: kalamata olives work great for a Mediterranean-style hummus sandwich, but I think any kind would be lovely, such as black olives or green olives.
- Onions: you can use fresh red onion or even better, balsamic marinated onion if you can.
- Leafy greens: a mix of greens or baby arugula is great.
- Balsamic glaze: I love this balsamic glaze from the brand 365. It is sweet and thick, so it holds well in sandwiches.

#3: High-Protein Green Goddess Hummus Bagel Sandwich
I was inspired by my green goddess avocado-yogurt sauce and made a "very green" hummus bagel sandwich! This version includes fresh herbs, edamame, avocado, cooling cucumber and a drizzle of vegan Caesar dressing. Such a great combo!
What you will need

- Bagel + hummus
- Edamame: adds a ton of plant-based protein and a nice hearty texture. Simply use frozen shelled edamame for a quick recipe.
- Fresh herbs: use your favorite fresh herbs! I used a mix of mint and basil, but dill, parsley, oregano and cilantro would be amazing too.
- Avocado: for more creaminess and healthy fats. Look for a ripe avocado without any dark spots.

- Leafy greens: use any mix you like, baby spinach or baby arugula is great too.
- Vegan Caesar: Green goddess + Caesar flavors work so well together. You can make your own vegan Caesar dressing using tahini or use a store-bought vegan Caesar if you prefer.
How to make a Green Goddess hummus bagel sandwich recipe

Prepare the herb-hummus
In a small-medium bowl, add the hummus and the chopped fresh herbs. Stir to combine. You can also add some lemon juice if you would like.
Prepare the edamame
Add the edamame to a small bowl, then cover with water. Warm up using the microwave for 3-5 minutes, then drain well.
Toast + spread
Slice and toast the bagel, then spread a generous amount of the herb hummus.
Layer and serve
Add the edamame and gently press them in the hummus so it sticks well. Then, layer the cucumber and avocado over, then the leafy greens on the other side. Drizzle with some vegan Caesar dressing, add some freshly ground black pepper, close the sandwich and enjoy!
Pro tips
- Edamame is a great plant-based ingredient to boost meals and sandwiches with more protein. Always keep some in your freezer, they only take 5 min to thaw! In this case, if you don't have edamame, then swap for sweet green peas.

❗️Storage tips
These sandwiches are best when enjoyed right away so the bread feels fresh and isn't soggy when enjoyed.
That being said, if you like to prep lunches ahead to bring to work the next day, then you could make it the night before and keep it in an airtight container.

Hummus Bagel Sandwiches - 3 Ways!
Ingredients
For the garden veggie crunch hummus bagel sandwich
- 1 bagel
- ⅓ cup hummus
- 1 small carrot - peeled and shredded
- ¼ cup purple cabbage - shaved or finely sliced
- ¼ cup cucumber - finely sliced
- ¼ avocado - sliced
- 2 tbsp red onion, pickled or fresh - I used this quick lime pickled red onion recipe
- small handful of sprout
- sesame seeds
For the Mediterranean hummus bagel sandwich
- 1 bagel
- ⅓ cup hummus
- 1-2 roasted red pepper - patted dry, I used jarred roasted red pepper from the brand 365
- ¼ avocado - sliced
- 2 tbsp kalamata olives - sliced
- 2 tbsp red onion, pickled or fresh - this balsamic pickled red onion recipe is great in this sandwich
- small handful of leafy green - such as baby spinach, baby arugula or mixed greens
- drizzle of balsamic glaze - we love this store-bought balsamic glaze
For the Green Goddess hummus bagel sandwich
- 1 bagel
- ⅓ hummus
- 2 tbsp fresh herbs - chopped, such as mint, basil, cilantro, dill or parsley
- 2 tbsp frozen edamame
- ¼ cup cucumber - sliced
- ¼ avocado - sliced
- small handful of leafy greens - such as baby spinach, baby arugula or mixed greens
- drizzle of vegan Caesar dressing - use store-bought vegan Caesar sauce or make your own 5-min vegan Caesar dressing using tahini
Instructions
For the garden veggie crunch hummus bagel sandwich
- If making the pickled onions from scratch, then plan ahead and try prepping them at least 30 minutes before making the sandwich or even better, the day before. You can also use fresh and finely sliced red onion if you prefer.
- Prep the veggies: shred the carrot, shave or finely slice the purple cabbage, slice the cucumber and slice the avocado.
- Slice the bagel in half, toast it and generously spread hummus on both sides.
- Add the carrot, cabbage, cucumber, avocado and onions on one side. Add the greens, sprinkle the sesame seeds and close up the sandwich. Enjoy!
For the Mediterranean hummus bagel sandwich
- If making the pickled onions from scratch, then plan ahead and try prepping them at least 30 minutes before making the sandwich or even better, the day before. You can also use fresh and finely sliced red onion if you prefer.
- Pat dry the roasted red pepper to remove the extra moisture.
- Slice the bagel in half, toast it and generously spread hummus on both sides.
- Add the roasted red pepper, cucumber, avocado, olives and onion, then top it off with the greens. Add a drizzle of the balsamic glaze, close the sandwich and enjoy!
For the Green Goddess hummus bagel sandwich
- Add the edamame to a small bowl and cover with water. Warm up in the microwave for 3-5 minutes, then drain well.
- Meanwhile, add the hummus and fresh herbs to a bowl and stir to combine. Feel free to add a little lemon juice as well.
- Slice the bagel in half, toast it and then spread the hummus over each slice.
- Add the edamame over one side and press the beans in the hummus so they stick well. Top it off with cucumber, avocado and leafy greens, then drizzle a little vegan Caesar dressing. Close the sandwich, slice in half and serve!
