For the garden veggie crunch hummus bagel sandwich
If making the pickled onions from scratch, then plan ahead and try prepping them at least 30 minutes before making the sandwich or even better, the day before. You can also use fresh and finely sliced red onion if you prefer.
Prep the veggies: shred the carrot, shave or finely slice the purple cabbage, slice the cucumber and slice the avocado.
Slice the bagel in half, toast it and generously spread hummus on both sides.
Add the carrot, cabbage, cucumber, avocado and onions on one side. Add the greens, sprinkle the sesame seeds and close up the sandwich. Enjoy!
For the Mediterranean hummus bagel sandwich

Pat dry the roasted red pepper to remove the extra moisture.
Slice the bagel in half, toast it and generously spread hummus on both sides.
Add the roasted red pepper, cucumber, avocado, olives and onion, then top it off with the greens. Add a drizzle of the balsamic glaze, close the sandwich and enjoy!
For the Green Goddess hummus bagel sandwich
Add the edamame to a small bowl and cover with water. Warm up in the microwave for 3-5 minutes, then drain well.
Meanwhile, add the hummus and fresh herbs to a bowl and stir to combine. Feel free to add a little lemon juice as well.
Slice the bagel in half, toast it and then spread the hummus over each slice.
Add the edamame over one side and press the beans in the hummus so they stick well. Top it off with cucumber, avocado and leafy greens, then drizzle a little vegan Caesar dressing. Close the sandwich, slice in half and serve!

These hummus bagel sandwiches are best when enjoyed right so the bread does not turn soggy. That being said, you can make it up to 24 hours ahead of time and keep in an airtight container in the fridge.
