This easy 4-ingredient chocolate-covered pineapple recipe makes for an amazing speedy no-bake dessert that everyone loves! Perfect for the hot summer days and can be made a few days ahead. Great for kids, adults and family gatherings, plus they are naturally vegan and gluten-free.

These ultra-simple dark chocolate-covered pineapple slices are a must-try, they are so delicious! The tangy, tropical and juicy pineapple with the sweet, slightly bitter and rich dark chocolate make for a remarkable combo.
This recipe makes for the best dessert to whip up on a hot day or whenever you don't feel like cooking much (or turn on the oven). They feel refreshing, yet the chocolate adds a crunchy and earthy bite that's simply amazing.
I must say though that anything that's chocolate-covered will catch my attention. Especially these chocolate-covered peanut butter dates and these chocolate-covered roasted chickpeas, both are done so quickly and make for an easy snack that's packed with nutrition.
But now I was craving something fresh and fruity, so I experimented with pineapple. And it turned out even better than I thought!
This recipe is inspired by the classic dessert: fruit dipping in chocolate fondue. But in this case, the chocolate firms up around the fruit to make for a delicious sweet shell. You can grab the pineapple ring just like a cookie or a healthier donut, so fun!

Ingredients you will need

- Fresh pineapple: I highly recommend using fresh pineapple for this recipe. You can get a whole pineapple and prepare it into rings from scratch or feel free to buy already sliced pineapple from the grocery store to save some time.
- Dark chocolate chips: dark chocolate chips with a higher cacao content pair well with the pineapple flavor, but any type of chocolate will work for this recipe. I used the dairy-free chocolate chips from the brand Enjoy Life.
- Coconut oil: used to help firm up the chocolate crust. Use refined or unrefined coconut oil depending on if you want a coconut flavor or not. A coconut taste would be lovely here with the tropical pineapple!

How to make chocolate covered pineapple rings

Although this recipe can be assembled within 10 minutes, you will have to plan ahead and allow some time for the chocolate to firm up.
Prepare the pineapple
First, you will have to slice the fresh pineapple into rings: start by removing both edges of the fresh pineapple, flip the pineapple on one of its flat edges and then, use a sharp knife to remove the peel by slicing from top to bottom.
Then, slice the fruit into about 1-inch thick slices. You can use your knife to remove the center or a small round cookie cutter.
Then, gently pat dry the pineapple rings using paper towel and place them on a parchment paper-covered baking sheet. Set aside.
Prepare the chocolate
Transfer the chocolate chips to a small bowl and add the coconut oil. Warm up in the microwave for about 1 minute. You want the chocolate to be mostly melted but still with some pieces intact. Let it rest for about another minute, then stir to help everything melt to a smooth texture.
If the chocolate isn't completely smooth, then you can warm up again, but only 20-30 seconds at a time. Do not overheat!
Assemble and chill
Then, grab a ring of pineapple one at a time and dip it in the chocolate. You can do like me and use a small spoon to help the chocolate cover a larger area, especially if your bowl does not allow you to dip in the fruit deep enough.
I like to leave a small area uncovered, which helps with handling.
Transfer the chocolate-dipped pineapple to the prepared baking sheet and keep going until you are done with all the fruit.
Then, add your toppings of choice while the chocolate is still warm so it sticks well, and transfer the baking sheet to the fridge to help the chocolate set faster.
Once the chocolate is solid, about 20-30 minutes later, then you can grab and enjoy!






Helpful tips
- Make sure to pat dry the fruit before adding the chocolate, or it will be too juicy and will make the process harder.
- Do not warm up the chocolate for too long, less is better, you can always warm it up more if needed. If you overheat the chocolate chips, then it might cook, seize or burn and you will have to start over.
- Take your time when dipping the fruit in chocolate and try to remove the extra chocolate dripping or it will spread over the parchment paper.
- To make it easier, don't hesitate to use already prepared fresh pineapple rings from the store, this will save you some time and make this recipe even easier.

Favorite toppings
The fun part is to garnish the rings with all your favorite toppings! They add more layers of textures and make the ring shine even more. You can make them with your kids so everyone can personalize theirs. Here are a few topping ideas to try:
- Shredded coconut
- Slivered almonds
- Chia seeds
- Hemp seeds
- Flakey sea salt
- Chopped peanuts
- Mini chocolate chips
You can also add an extra drizzle of melted chocolate after the first layer is mostly set.

Variations
I like making rings, but you can shape them differently! You can simply chop the pineapple into chunks and dunk the whole pineapple pieces in chocolate. Quarters or bites work too
You can even place a stick through a bite-size piece of pineapple and then cover it with the chocolate. That way you can just grab the stick to enjoy your chocolate pineapple bites. This would be perfect if making it for an event or family gathering.

Storage tips
They store pretty well in an airtight container in the fridge for 2 days. Longer storage will make the pineapple chocolate not feel as fresh and the juice from the fruit can make it soggy.

FAQs
Can you freeze chocolate-covered pineapple?
Yes, you can! Keep them in an airtight container and freeze for up to 3 months. Let them thaw in the fridge for a few hours or overnight before enjoying.
Can I use canned pineapple?
I haven't tried it, but although the flavor would not be as fresh, I think it would work. Canned pineapple is very juicy and softer compared to ripe fresh pineapple, so if using canned, then make sure to drain and pat dry the fruit using a paper towel. Also, I would recommend doing chunks of pineapple as opposed to rings.
Can I make it without coconut oil?
The coconut oil helps create a crust of chocolate that's solid yet tender. That being said, it is not essential and you could make it without the oil. Simply melt the chocolate alone before covering the fruit.

Chocolate Covered Pineapple
Ingredients
- 1 ripe fresh pineapple
- 5 oz dark chocolate chips or chunks - I used half a bag of Enjoy Life chocolate chunks
- 1 tbsp coconut oil - refined or unrefined

Instructions
- Prepare the pineapple: slice off both edges and then, flip on one of its flat surfaces. Use a sharp knife to remove the peel by slicing from top to bottom all around the fruit. Slice into 1-inch thick slices, then remove the middle part using a small cookie cutter or your knife.
- Pat dry the rings of pineapple using paper towel and place them on a parchment-covered baking sheet. Set aside.
- Transfer the chocolate chips and coconut oil to a small bowl, then warm up using the microwave for about 1 minute. Let the chocolate rest for another minute, then stir to help the chips melt to a smooth texture. You can warm again for about 20 seconds at a time, but be careful not to heat too much or the chocolate will cook or burn.
- One ring at a time, dip the fruit into the chocolate and use a spoon to help cover the fruit. I like to leave a small area uncovered to help with handling.
- Transfer to the prepared baking sheet and keep going until you use all the fruit rings. Garnish with your favorite toppings, then transfer the baking sheet to the fridge to help the chocolate set. Chill for 20-30 minutes, then enjoy!
