This easy 4-ingredient chocolate-covered pineapple recipe makes for an amazing speedy no-bake dessert that everyone loves! Perfect for the hot summer days and can be made a few days ahead. Great for kids, adults and family gatherings, plus they are naturally vegan and gluten-free.
Prepare the pineapple: slice off both edges and then, flip on one of its flat surfaces. Use a sharp knife to remove the peel by slicing from top to bottom all around the fruit. Slice into 1-inch thick slices, then remove the middle part using a small cookie cutter or your knife.
Pat dry the rings of pineapple using paper towel and place them on a parchment-covered baking sheet. Set aside.
Transfer the chocolate chips and coconut oil to a small bowl, then warm up using the microwave for about 1 minute. Let the chocolate rest for another minute, then stir to help the chips melt to a smooth texture. You can warm again for about 20 seconds at a time, but be careful not to heat too much or the chocolate will cook or burn.
One ring at a time, dip the fruit into the chocolate and use a spoon to help cover the fruit. I like to leave a small area uncovered to help with handling.
Transfer to the prepared baking sheet and keep going until you use all the fruit rings. Garnish with your favorite toppings, then transfer the baking sheet to the fridge to help the chocolate set. Chill for 20-30 minutes, then enjoy!
