These vegan avocado salad tostadas are the perfect light meal to enjoy when you need something satisfying and packed with goodness. They are similar and just as easy as tacos, but maybe even more fun! Plus, the lime cilantro avocado topping is so fresh and zesty, which balances the earthy bean mash.
They remind me of my crispy black bean tacos, but these tostadas are quicker since there is no baking in the oven involved.
Just spread the refried beans over the already-crispy tostadas on a platter, then top with the simple avocado salad... so simple yet makes for a vibrant and colorful light meal everyone will love. Keep this recipe in mind for lazy lunches, quick snacks or easy weeknight dinners!

- Tostada shells: I used the tostada shells from the brand Guerrero. You can also make your own tostada shells using soft corn tortillas.
- Avocado: perfectly ripe avocados without black spots are important for this recipe since they are the star!
- Refried beans: I love the organic refried beans from the brand 365, but use any kind that you like.

📝 More topping ingredients
- Spicy: hot sauce or sliced jalapeño for some heat.

🍽 How to make avocado tostadas

Step 1: Transfer the canned refried beans to a bowl and mix with a small amount of water until smooth and spreadable. Set aside.

Step 2: In a bowl, add the diced avocado, tomatoes, red onion and cilantro. Add lime juice and salt to taste, then stir until combined.

Step 3: Gently spread the refried beans over the tostadas.

Step 4: Garnish with the avocado salad. Top with more cilantro and some hot sauce (if desired), then serve right away.

- If you don't have refried beans, then simply mash a can of black beans with a little salt, seasoning of your choice (chili powder, oregano) and a few splashes of water until the desired consistency.
- Wait just before serving before prepping the avocado salad to prevent oxidation (and browning) of the avocado.
- Chop the avocado into small cubes so they fit well on the tostadas.
- Be as delicate as you can when topping the crispy tostadas, since they can break if you press on them too much.

❗️Storage tips
Ideally, you would prepare these vegan avocado tostadas as you go, since the corn tortilla will eventually absorb moisture, which can make it soggy. Also, the avocado tends to change color after a while, making the tostadas less appetizing.
The good news is that this recipe is so quick to come together that there is no need to try making it ahead of time!

- 14-16 oz canned refried black beans
For the avocado salad
- 2 avocados - diced
- ½ cup cherry tomatoes - finely diced
- 2 tbsp red onion - finely diced
- ¼ cup cilantro - chopped
- 1 lime - juiced
- ¼-½ tsp salt - or to taste
