This amazing iced strawberry oat matcha latte makes for a tasty summer treat you can easily make right at home. All you need are strawberries (fresh or frozen), oat milk, sweetener, vanilla and matcha powder. The easy strawberry purée can be made ahead so you can whip up the drink in 5 minutes on busy weekdays. Fully vegan and dairy-free.

You loved my recent Starbucks-inspired chocolate chai latte, so I thought I would not wait any longer before sharing another homemade version of one of Starbucks's drink!
So, meet your new favorite matcha drink: Strawberry Oat Matcha Latte!
And if you have been following me for a little while now, then you must know how much I love everything matcha!
Vanilla matcha latte is my go-to quick treat for when I work from home. But when I have a few extra minutes, then I love to make my drink more special and go for a blueberry matcha latte or a mango matcha latte.
Fruit + matcha green tea makes for such a divine fusion of flavor!
And now that we are slowly approaching the spring, I made an iced strawberry matcha latte using oat milk to get into the summer mood! And wow, it was so amazing.
I have made a strawberry matcha latte many times before simply by adding chopped berries into my glass. But this time, I brought this drink to the next level by first cooking the strawberries into a puree. Totally worth the extra 10 minutes! Then, all you need is to layer the fruit sauce with ice cubes, matcha shot and a simple vanilla oat milk mixture.
It feels like dessert in a glass!

Ingredients you will need

- Strawberries: you can use either fresh strawberries or frozen strawberries, both will work well. If using fresh, then this drink will be at its best during berry season. Also, if your strawberries are very sweet, then you might not need much added sweetener.
- Matcha green tea powder: there are essentially 2 different grades of matcha green tea you can find: ceremonial grade matcha and culinary grade matcha. As their name suggests, ceremonial matcha is best for making drinks (higher quality, bright and vibrant green color, more expensive) and culinary grade matcha works well for baking and cooking (lower quality, brownish green, more affordable). I used the ceremonial matcha green tea powder from the brand Kettl that I got at my local Asian store. You can easily find matcha powder online as well.
- Oat milk: so creamy and rich with subtle sweet aromas naturally. I used the full-fat oat milk from the brand Oatly. Use unsweetened oat milk if possible so you can sweeten your drink just as much as you need.
- Vanilla extract: such a great pairing with the matcha and strawberry flavors. If you don't have any, then omit. And if your oat milk is vanilla-flavored, then skip on adding more vanilla flavor.
- Sweetener: I love using maple syrup for making drinks because of its mild caramel-like flavor. If you prefer, you can use agave nectar or syrup, or granulated sugar such as brown sugar.

How to make a strawberry oat matcha latte

Prepare the strawberry syrup or puree
Clean and dice the strawberries, then transfer them to a small saucepan. Add the water (⅓ cup) and turn on the heat to medium. Keep uncovered and keep cooking until the fruit turns soft and saucy. Stir once in a while and adjust the heat so the fruit simmer without sticking too much to the bottom.
You can use the back of a spoon or even a potato masher to crush the strawberries as they cook. Then, add the maple syrup, stir and transfer to a glass jar.
Cool down (you can transfer into the fridge) until ready to use.
Make the matcha oat milk
In a small bowl, sift the matcha powder and add the warm water. Use a matcha bamboo whisk to combine matcha and water. When whisking, I recommend following the shape of a "W" instead of a circular motion (it helps break the clumps). Keep whisking for about 30 seconds, the surface should turn foamy.
Then, pour the cold milk over the matcha shot and add the maple syrup and vanilla extract. Stir to combine and set aside.
Assemble
When ready to enjoy, add the strawberry syrup to the bottom of a tall glass (2-3 tablespoons or as much as you like). Then, top the strawberry layer with some ice cubes and pour the matcha oat milk mixture over.
Top it off with oat foam (optional)
This is optional, but if you have a handheld electric frother, then you can froth a small amount of plain oat milk until light and foamy, then pour or scoop over the matcha layer in your drink.
This gives it a nice visual and adds more layers, but again, totally optional.
Stir and enjoy!






Helpful tips
- When preparing the matcha shot, warm the water to about 70-80º. I usually do not try to be that precise, but once the water comes to a boil, I let it cool down for a few minutes so it is not super hot (which can alter the flavor of the matcha).
- A matcha whisk works best for dissolving the green tea powder into the water, but if you don't have one, then simply use a small whisk.
- You can also blend the cooked strawberry mixture to make for a smooth fruit puree (this is what I did for my blueberry matcha latte). I like this chunky version better with still some small pieces of fruit left, although you will need a wide straw to enjoy it.
- When layering the drink, you can also include some slices of strawberry within the ice cubes for a nice visual. And to create distinct layers, follow the steps seen in the video: fruit sauce first, then ice cubes, matcha oat milk and finally the oat foam (if using). The ice cubes help keep the mixtures apart.
- This recipe uses oat milk, but feel free to swap for another plant-based milk such as almond milk, soy milk or even coconut milk for an ultra rich and creamy result.

Serving suggestions and Variations
There are a few ways you can customize your drink to your preferences. Here are a few ideas:
- Boba: this would be a great recipe to add on some chewy boba tapioca balls. You can check out this strawberry boba for inspiration!
- Other fruit: you can mix and match with other berries, such as blueberries or raspberries. Other fruits that would work well are cherries, peaches and mangoes.
- Antioxidant boost: I love adding nutrient-dense powders to drinks! Acai powder (check out this acai strawberry lemonade) and beet powder (check out this pink latte) would be great incorporated in the fruit sauce. They add flavor, a more intense color and a nice boost in antioxidants.


FAQs
How to make it ahead?
I highly recommend making the strawberry syrup or puree ahead of time. I even make a double batch and keep it in the fridge to make matcha latte but also to use in overnight oats or to top creamy coconut yogurt. The strawberry sauce will keep pretty well in an airtight container in the fridge for up to 4-5 days.
Can I enjoy it warm?
I haven't tried it yet, but I bet it would be delicious! In that case, no need to refrigerate the strawberry puree before serving. Also, warm up the oat milk before serving in a large mug (and obviously do not add any ice cubes).

Iced Strawberry Oat Matcha Latte
Ingredients
- 1-1½ tsp matcha powder
- ¼ cup warm water
- 1 cup oat milk - I used the full fat oat milk from Oatly
- 1-2 tsp maple syrup
- ½ tsp vanilla extract
- ice cubes - to serve
For the strawberry syrup or puree
- 2 packed cups fresh or frozen strawberries - diced
- ⅓ cup water
- 1-3 tbsp sweetener - I used maple syrup, but brown sugar works too. Adjust the amount depending on how sweet the strawberries are.
Instructions
Make the strawberry syrup
- Add the strawberries and water (⅓ cup) to a small saucepan and turn on the heat to medium. Stir and cook uncovered until soft and saucy, about 10 minutes. Adjust the heat so it simmers gently without sticking to the bottom.
- Then, add the sweetener (1-3 tablespoons) and stir to combine. You can use the bottom of a spoon or a potato masher to crush the fruit (you can also blend for a very smooth texture). Transfer to a small airtight container and cool down (I recommend transfering to the fridge until ready to use).
Make the matcha oat mixture
- To a small bowl, sift the matcha powder and add the warm water (¼ cup). Use a bamboo whisk to combine (about 30 seconds, it should get foamy on top).
- Then, add the oat milk, vanilla extract and sweetner (1-2 teaspoons). Stir and set aside.
Assemble and serve
- Add some strawberry puree to the bottom of your serving glass (2-3 tablespoons) and then add some ice cubes. Pour the matcha oat milk over and top it off with some oat foam (optional, see notes)

Notes
- To make the oat foam, simply add some oat milk (about ¼-1/3 cup) to a mug, then use a handheld frother to froth the milk until light and foamy. Then, pour over the top of your drink.
- I recommend using ceremonial-grade matcha green tea powder if possible (better quality, brighter green, sweeter flavor, and more expensive than culinary grade). That being said, if you only have culinary-grade matcha, then it will also work!
