    Easy Apple Popsicles with Yogurt

    These apple popsicles are such a great way to enjoy fall flavors during the warmer months. They are completely vegan and combine fresh apples, dairy-free yogurt, maple syrup and cinnamon. So easy, quick and healthy!

    These homemade apple popsicles are such a treat in the fall!

    Whenever apples are in season, I like to whip up a vegan apple galette to make the most of the season's flavor. It is so much easier to make than it seems!

    But these apple cinnamon yogurt popsicles are another ultra quick and easy fall or summer recipe to try. They combine sweet apples with creamy dairy-free yogurt and warming cinnamon, with a touch of maple syrup and vanilla extract, the perfect sweet treat you can feel good about.

    They come together in a few minutes and they make for a healthy snack you can prep ahead and keep in the freezer for the last minute treat. Your whole family will enjoy them, kids and adults!

    🗒 Ingredient notes (+ substitutions)

    • Apples: I used Honeycrisp apples for their super sweet flavor, but you can use other kinds of apples, such as Gala apples or McIntosh apples.
    • Dairy-free yogurt: I LOVE and use the plain cashew yogurt from the brand Forager Project for almost all my recipes calling for vegan yogurt. You can use sweetened and vanilla-flavored yogurt if you want, although you might need to adjust the amount of maple syrup and vanilla extract if doing so.
    • Maple syrup: pairs so well with the apples and cinnamon, but you can use any sweetener that you prefer, such as granulated sugar or agave nectar.

    📝 Variations

    • Topping: once you pour the popsicle mixture into the mold, you can garnish the top part with some granola or chopped nuts for more texture. Or, drizzle some caramel sauce at the bottom of the mold before pouring the apple mixture.
    • Fruit: you can swap one of the apples for an orange or a peach!
    • Coconut milk: feel free to swap the yogurt for full-fat coconut milk for a different flavor profile.
    • Sour apple popsicles: use green apples and add a little more lemon juice for a lovely sour ice pop!

    🍽 How to make apple yogurt popsicles

    Step 1: Add all the ingredients to a blender (yogurt, apples, maple syrup, lemon juice, cinnamon, vanilla and water).

    Step 2: Blend until smooth and creamy, then taste to adjust sweetness.

    Step 3: Divide in your popsicle mold.

    Step 4: Then, freeze for a minimum of 5 hours before unmolding.

    💡 Helpful tips

    • I highly recommend using a silicone popsicle mold, they make the unmolding process so much easier! Simply run some warm water over the silicone mold until you can gently pull the popsicles out.
    • Wait for the last minute before slicing your apples so they don't have time to turn brown before blending (the lemon juice will help to keep a bright color!).
    • Taste the mixture straight from the blender! You can add more cinnamon or maple syrup depending on your taste.

    ❗️ Storing apple popsicles

    You can unmold all the popsicles at once to free up space in your freezer and to be able to use your popsicle mold for other recipes. I also find that popsicles store better once out of the mold. You can simply transfer them in a container, large plastic bag or use individual bags. Try to enjoy them within 3 months!

    ❓ FAQs

    Can I use apple sauce to make apple popsicles?

    Yes! In that case, use about 2 cups of apple sauce and omit the water.

    Do I need to peel the apples when making apple popsicles?

    No, you don't need to peel the apples! When incorporating apple peels in a recipe, I recommend to use organic apples and to thoroughly wash them before using. Apple peel is loaded with nutrients and will add color to the popsicles!

    Can I make popsicles without a mold?

    Yes, you can. Simply pour the mixture into small paper cups, then cover them with foil. You can make a small opening over the foil using a sharp knife to be able to place popsicle wooden sticks, then transfer in the freezer.

    Equipment

    • Blender
    • Popsicle mold

    Ingredients
      

    • 3 apples - cored and roughly chopped
    • 3 tbsp maple syrup - or agave nectar
    • 1 cup plain yogurt - I used cashew yogurt from Forager
    • ¼ cup water or plant-based milk
    • 1 tbsp lemon juice
    • 1 tsp vanilla extract
    • ½ tsp cinnamon

    Instructions
     

    • To a blender, add all the ingredients and blend until smooth.
    • Pour the mixture into your popsicle mold (you should be able to make 8 large popsicles) and freeze for at least 5 hours before unmolding.
    • To unmold, run the popsicle mold under warm water until you can pull the popsicles out.
