In a jar or a medium size bowl, combine all the ingredients. Cover and store in the fridge ideally overnight or at least for 2 hours. During that time, the oats will soften.
Once the oats are ready, eat straight from the jar. Top with more diced orange and pumpkin seeds if desired.
If you want to store the oats for up to 5 days in the fridge, then I recommend you keep the orange apart from the mixture and add the pieces of fruit the night before eating.
