These healthy coconut peach popsicles only require 3 ingredients to make! They are super creamy and slightly sweet with a fun texture, thanks to their delicious fresh peach chunks.
In the blender, add the coconut milk, half of the peach and the liquid sweetener and blend until very smooth. Transfer to a medium bowl (pour-able bowl is easier).
Chop the other half of the peach in about 1 inch pieces and add them to the coconut milk mixture. Stir to combines.
Transfer the mixture to a popsicle mold and freeze for at least 4 hours before eating. I recommend to simply prepare the popsicles the day before you need them.
Notes
The chunks of peaches will tend to sink at the bottom of your bowl, so use a spoon to help distribute the fruit equally in between the mold cavities.
