This quick and easy vegan tahini Caesar dressing recipe is the only one you will need! It bursts with huge flavors, thanks to the garlic, lemon, Dijon mustard and capers, and has the most incredible creamy and rich consistency. Perfect for salads, but also amazing drizzled over bowls or sandwiches and served as a healthy dipping sauce. 100% vegan and dairy-free.
½-1lemon (or about 2-3 tablespoons)juiced, or more to taste
1tbspcaperschopped
1clove of garliccrushed
1tspDijon mustard
salt and ground black pepperto taste
1tbspnutritional yeastoptional
2-4tbspwaterto thin out to taste (I used 4 tablespoons)
Instructions
In a bowl, add the tahini, lemon juice (start with half a lemon), garlic, Dijon mustard, capers, nutritional yeast, salt and ground black pepper. Add 2 tablespoons of water and whisk until combined.
Then, add more water (one tablespoon at a time) and keep stirring until you reach the desired consistency. Taste and add more lemon juice and salt if needed.
Enjoy as a salad dressing or drizzle over grain bowls, use as a spread in sandwiches (keep it thicker in that case) or enjoy as a dipping sauce.

This recipe is very versatile and you can easily tweak the ingredients to make it your own: you can add some store-bought vegan parmesan cheese, make it spicy with a pinch of red pepper flakes, use grainy mustard for more texture or swap some of the tahini for low-fat dairy-free yogurt for a lighter version.
