This delicious cilantro lime tahini dressing is such a breeze to make and can be whipped up within 5 minutes. It combines nutty tahini with tangy lime, garlic and fresh herbs. Such a simple sauce that delivers a huge amount of flavor, perfect for bowls, salads, to use as a dipping sauce and more. Naturally vegan, gluten-free and dairy-free.
Add the garlic to a food processor and pulse until crushed. Then, add the cilantro, tahini, lime juice, salt and ¼ cup water. Process until smooth.
Then, use a spatula to scrape the sides and bottom and process again. Add more water until you reach desired consistency and taste to adjust lime and salt.
You can serve the sauce right away over bowls, salads, sandwiches or burgers, over tacos and even as a dipping sauce. You can make the sauce thinner or thicker depending on how you want to serve it. Enjoy!

Notes
Storage: keep the sauce in an airtight container in the fridge for up to 5 days. Tahini tends to turn thick when chilled, so try to take it out of the fridge 1 hour before you need it or add a little extra water if needed.
This sauce is SO versatile! Feel free to add some spices (chili powder, smoked paprika, spicy cayenne pepper, etc) or other flavoring ingredients (nutritional yeast, balsamic vinegar, etc). Check out the blog post for more ideas!
