This easy Loubia is a Moroccan version of a white bean stew and makes for a perfect weeknight meal. It features white beans, tomatoes, vegetable broth, spices and fresh herbs. It comes together in under 30 minutes and is naturally vegan and vegetarian.
3 x 15 ozcanned cannellini beansrinsed and drained, navy or butter beans are great too.
a handful of fresh cilantro and parsleychopped
Instructions
Warm up a large pot with a little oil and then, add the onion with a pinch of salt. Stir and cook for 5-7 minutes. Then, add the garlic and spices (paprika, cumin, ginger, turmeric, black pepper). Stir to coat the onion and cook for one more minute.
Add the broth, beans and tomatoes. Stir to combine, cover and simmer on medium heat for about 20-25 minutes.
Add the herbs and cook for 1-2 minutes, then serve with a side of crusty bread or opver rice. Enjoy!

This recipe is very versatile. You can adjust the consistency by adding more broth or simmering uncovered for a little longer. Also, feel free to add more spices and include more veggies, such as carrots, red bell pepper, celery, etc. Check out the blog post for more ideas!
