This delicious coconut water mocktail is the perfect non-alcoholic drink to enjoy when you feel like adding a little bit of sunshine to your day! It is bright, zesty, perfectly sweet and done within 5 minutes. Delicious fuss-free drink that everyone can enjoy.
If you want to garnish the rim of your glass with toasted coconut (optional), then start by transferring the shredded coconut to a nonstick pan (no oil) and toast on medium heat shaking the pan often until it turns slightly golden brown. This can take 5-10 minutes and watch closely as it burns quickly. Once done, transfer to a small plate and let it to cool down.
Run a lime wedge around your serving glass and then, flip it over the plate with the toasted coconut and twist/press until the rim is covered.
Then, add the pineapple juice (or orange juice), lime juice and sweetener (start with 1 teaspoon and adjust later). Stir to combine, then add plenty of ice cubes. Pour the coconut water over, sprinkle more toasted coconut and serve!

For a healthy mocktail, then be sure to use a no-added-sugar brand of pineapple juice or orange juice that does not come from concentrate.
You can use other kinds of juice if you want, such as cranberry juice, grapefruit juice, etc.
For a sparkling mocktail, then use a taller glass and top it off with some sparkling water.
You can also make a creamy coconut mocktail by adding 1-2 tablespoons of coconut cream or coconut milk! In this case, you might need a cocktail shaker to help dissolve the cream.
