This easy-to-make matcha mocktail makes for a delicious, stunning and refreshing non-alcoholic drink perfect for any occasion. It combines matcha green tea powder, zesty lime juice, fresh or frozen raspberries and sparkling water to give it a festive bubbly feel.
1limejuiced, plus extra slices of lime for decorating
1-2tbspmaple syrupor to taste
tonic water or sparkling waterabout 1 cup
1tspmatcha powder
3tbspwarm water
ice cubes for serving
Instructions
If using frozen raspberries, then briefly warm them up to thaw them (I use the microwave, about 30-60 seconds).
Add the mint leaves, lime juice and raspberries (fresh or thawed frozen) to the bottom of your serving glass. Muddle the ingredients using a muddler or a wooden spoon until bruised, then add sweetener. Set aside.
To a small-medium bowl, sift the matcha powder and then, add the warm water. Use a bamboo matcha whisk to combine the matcha with water.
Add plenty of ice cubes into your serving glass with the muddled ingredients and then pour the sparkling water over. Top it off with the matcha shot and adjust the sweetener to your taste. Decorate with more slices of lime and a sprig of fresh mint, enjoy!

Notes
If you don't have raspberries, then feel free to use blueberries, strawberries or blackberries. Also, you can skip using fruit altogether and prepare a more classic matcha mojito mocktail recipe.
High-quality ceremonial-grade matcha powder will give a better flavor to your mocktail, although a culinary works too if that's all you have. I used the matcha powder from the brand Matcha Organics.
