These vegan banana bites taste just like ice cream bites! Dip banana pieces in a sweet and creamy almond butter mixture, then pop in the freezer until ready to eat. They make for a perfect frozen and healthy treat always ready to go and kids love them!

In a small pot, combine the almond butter, coconut oil and maple syrup. Warm over medium heat while whisking. The mixture is ready when completely uniform, slightly warmed and the coconut oil is melted (should only take a few minutes). Do not overcook!
Then, one piece of banana at the time and using 2 forks, dip the pieces and roll them in the almond butter mixture until covered. No need to be perfect, just cover them as much as you can! Keep going until you covered all the banana pieces.
Transfer to a parchment paper covered baking sheet (or cooling rack) and pop in the freezer for at least 2 hours.
Enjoy straight from the freezer!
Notes
You can also sprinkle the almond butter covered bites with shredded coconut, chopped nuts, chocolate chips or sea salt before freezing them, if desired.
If using the cooling rack to freeze them, then use a fork when removing the bites as they tend to stick to it a little (or use the parchment paper).
After frozen, you can transfer the bites in a container and keep it in the freezer.
