This mango mocktail makes for such a delicious tropical twist on a classic mojito mocktail recipe. Includes a homemade mango coulis (done in 2 min and easy), fresh mint, zesty lime juice and sparkling water for a bubbly festive drink. Perfect during pregnancy and kids can enjoy it too, plus it makes for a delicious non-alcoholic drink for when you want to skip the booze.

Instructions
Start by making the mango coulis. You can skip on cooking the fruit if you want a quicker recipe, especially if your mango is super ripe, it should blend to smooth very easily! You can make the purée ahead of time and keep it in the fridge until ready to serve.
When ready to assemble: add the chili powder, sugar and sea salt on a small plate and combine. Run a lime wedge all around your serving glass and then, flip it upside down over the plate. Twist it in the spice mix so it sticks to it.
Add the lime juice and mint leaves to the glass and muddle gently to release the flavor from the mint (you can use a muddler or the back of a spoon). Then, add the mango purée, ice cubes and pour the sparkling water over. Stir and enjoy!

Add more sweetener as needed, which will depend on how sweet your mangoes are.
You will have best results if using freshly squeezed lime juice, although store-bought lime juice can work too if in a pinch.
You can turn the recipe into a pitcher to serve many people. Just be sure to pour the sparkling water right before serving for the best bubbly effect. That being said, if serving 3-4 people, I still prefer to make individual glasses. You can align the glasses and make the mocktails at the same time, which is as quick as making a pitcher and it makes for a more beautiful look with the layers of colors.
