This vegan raspberry mousse is so easy to make! The tofu base makes this dessert higher in protein and you will love how healthy it is. It's delicious, low in fat and kids love it! Also Gluten-free.

4tbspliquid sweetener (agave nectar or maple syrup)or to taste

1 ½cupfresh raspberriesplus more for serving
Instructions
In a blender, add all the ingredients, except for the raspberries. Blend until you get a very smooth texture, almost whipped, for about one minute. You want to reach a mousse-like texture.
Transfer 1 cup of the mixture to a bowl and set aside.
To the same blender containing the rest of the tofu mixture, add the raspberries and blend for about 30-60 seconds or until super smooth.
Pour the raspberry-tofu mixture equally into 4 to 6 serving jars.
Then, separate the 1 cup of the white vanilla tofu mixture equally in between the jars on top of the raspberry layer. Be gentle when pouring it so it sits on top. Add fresh raspberries if desired.
Better when enjoyed right away.
Notes
The mousse effect of this dessert is created by blending the ingredients together long enough to incorporate air into the mixture. The texture is somehow in between a mousse and a pudding. If you have a high-speed blender (vitamix or blendtec), then blending for one minute should be enough to get that mousse-like texture. If not, then blend for a bit longer.
This dessert is better when enjoyed right away (or within 2-3 hours). With time, the solid vs liquid from the fruits can separate and make the mousse less enjoyable.
