Learn how to make a delicious strawberry latte right at home! It combines a homemade strawberry purée with creamy oat milk and strong coffee, plus it can be done in under 20 minutes. It is so easy to prepare and makes for such a delicious way to enjoy coffee!

Instructions
Make the strawberry purée (or syrup)
Transfer the strawberries to a small saucepan and then add the maple syrup and water.
Bring to a boil and then slightly turn down the heat to medium. Keep simmering for about 10-15 minutes uncovered and press on the strawberries once in a while with a spoon or potato masher. The mixture is ready when the fruit is really soft and the consistency syrupy.
At this point, you have a few options: 1- break up the fruit pieces with a potato masher or a fork and leave the syrup as is for a chunkier fruit mixture (enjoy with a wider straw if needed) 2- strain using a fine mesh colander (the strawberry syrup is what falls in the bowl underneath) 3- blend using an immersion blender or a stand blender. Once done, place the syrup in the fridge to chill until ready to use.
Make the latte
Make the espresso or strong brewed coffee. Place in the fridge until ready to serve. You can make the coffee using an espresso machine, French press or a regular coffee machine (make it stronger). Check out the blog post for more details.
To serve, add about 2 tablespoons of the strawberry syrup to the bottom of a serving glass, then top with lots of ice cubes and then slowly pour the oat milk over. Add the coffee on top, stir and enjoy right away!

Once the latte is assembled, then it is best to enjoy it right away. You can make the strawberry purée up to 4 days ahead and keep it in an airtight container in the fridge until ready to use. You can also make the coffee ahead and let it chill in the fridge for up to 12-24 hours ahead of time.
Feel free to add some vanilla extract or cinnamon to the milk for more flavor.
Oat milk is great for a creamy and rich plant-based latte, but use your favorite milk, such as almond, soy or coconut milk.
