This simple berry tonic recipe is going to be a favorite this summer! It includes a mix of your favorite berries, lemon juice, a little sweetener and sparkling water. Makes for such a delicious, hydrating, antioxidant-rich and stunning chilled drink to enjoy under the sun.
2cupsfresh berriessuch as blackberries, strawberries, raspberries and blueberries.
2-4tbspmaple syrupor to taste, depending on how sweet your berries are
½lemonjuiced
⅓cupwater
For the berry tonic
2-4tbspberry syrup (see recipe above)
1cupsparkling wateror to taste
ice cubes
lemon wedgesto garnish
fresh mint or basiloptional, to garnish or muddle in the glass
Instructions
Make the berry syrup
In a blender, add the berries, lemon juice, sweetener and water. Blend on high until smooth. Then, taste and adjust sweetener and lemon juice to taste.
You can use the berry syrup right away or store in a jar in the fridge until ready to use.
Make the berry tonic
To make the tonic, then fill a glass with ice cubes, add a few leaves of mint (optional), pour 2-4 tablespoons of the berry syrup over the ice cubes and then, fill up your glass with sparkling water.
Decorate with a lemon wedge, more berries and leaves of mint, stir and enjoy right away with a straw.

Storage: you can make the berry syrup ahead of time and keep in the fridge for up to 3-4 days. Stir well before using. Once the the berry tonic is done, it should be enjoyed right away to make the most of the bubbly effect.
The berry syrup can also be used in different ways, such as over pancakes or ice cream, in oatmeal or overnight oats, drizzled over chia pudding, etc.
