This quick gochujang aioli sauce is so easy to make and bursts with amazing Korean flavors. Made using only a few simple ingredients, comes together within 5 minutes and makes for a perfect dipping sauce for French fries or spicy mayo to use in burgers, sandwiches or to drizzle over bowls and vegetables. 100% vegan and easy to make gluten-free.
2tbspgochujang pasteadjust the amount for a more or less spicy mayo
1clove of garliccrushed
1green onion (or about 2-3 tablespoons of chives)finely chopped
2tsprice vinegaror lime juice
saltto taste (optional)
Instructions
In a medium bowl, whisk together the mayonnaise, yogurt (or more mayo), gochujang paste, rice vinegar, garlic and salt. Then, taste and adjust flavor to your taste.
You can serve it right away or chill for 1-2 hours (or overnight) to allow the flavors to deepen before serving. Enjoy!

Using 100% mayo (1 cup of mayo and no yogurt) would make this aioli thicker.
Feel-free to also include a few drops of sesame oil, more garlic, gochugaru, cayenne pepper, sweetener, etc.
