Chocolate Covered stuffed Dates with Peanut Butter
These chocolate covered dates with peanut butter are ultra easy to make, wholesome and simply the BEST sweet snack for your whole family! They pair nutrient-dense dates with natural peanut butter and dark chocolate and are completely vegan, dairy-free and gluten-free.
Using a knife, make an opening on the dates without slicing them all the way through. Then, remove their pit and stuff the cavities with peanut butter.
Place the dates on a flat surface (plate or baking sheet) and then, press the peanuts over to make them stick. Set aside.
Add the chocolate chips and coconut oil to a small pot and warm up on medium heat. Almost constantly stir until most of the chips are melted, then remove from the heat. Keep stirring until the chocolate sauce is completely smooth (careful not to overcook the chocolate!).
Then, cover or drizzle the chocolate over the dates (you can also completely dunk the dates in the sauce). Garnish with sea salt while the chocolate is still melted and then, transfer the dates into the fridge to let them set (about 30 minutes). Enjoy!

Once the chocolate is all set, then transfer the dates into an air-tight container and keep in the fridge for up to 5 days. You can also freeze them!
This recipe is easy to customize: swap the peanut butter for pumpkin seed butter, tahini or sunflower seed butter. You can also garnish with chia seeds, shredded coconut or pumpkin seeds instead of peanuts if you prefer. See the blog post for more ideas!
