This super easy 4-ingredient no bake peanut butter fudge is completely vegan, high-in-protein and wonderfully melts in your mouth! Makes for an amazing dessert recipe or sweet snack you can make ahead that your whole family will enjoy.
In a medium bowl, combine the peanut butter, melted coconut oil, maple syrup and vanilla extract. Stir well until smooth and uniform.
Line a loaf pan with some parchment paper and pour the peanut butter mixture over. Tilt the pan slightly a few times to even out the surface of the fudge. Garnish with desired topping ingredients and place in the freezer for at least an hour to set.
Then, take the fudge out and let it sit on the counter for about 10-15 minutes before unmolding and slicing un squares or bars.

Use a natural peanut butter that's pourable (stir well in the jar first) to make this recipe.
A refined coconut oil will give you a fudge that's free of coconut flavor.
Store the sliced fudge in the fridge for a week or in the freezer for 3 month.
