These ultra gooey and decadent vegan banana brownies are a must-try! Made without added oil and using oat flour, they are healthier and completely dairy-free, gluten-free and vegan. Perfect good-for-you dessert or snacking and healthy enough to enjoy for breakfast!
Pre-heat the oven to 350ºF and line a 8 x 8 baking dish with parchment paper.
In a large bowl, combine the oat flour, baking powder, cacao powder and salt.
In a medium bowl, combine the mashed bananas, maple syrup, plant milk, almond butter and vanilla extract. Whisk well so there are no clumps anymore.
Pour the wet mixture over the bowl with the dry and stir until combined. Then, fold in the chocolate chips.
Pour the batter in the prepared baking dish and smooth the surface using the back of a spoon or a spatula (you will have to press the batter up to the corners). Garnish with more sliced bananas and chocolate chips, if desired.
Bake for 35 minutes or until a tooth pick comes out clean. For extra gooey brownies, then check for doneness after 30-32 minutes.
Let the brownies cool down before slicing in squares. Enjoy!

Store the brownies at room temperature for up to 24 hours. Then, slice in squares and keep in an air-tight container in the fridge for up to 4 days. Can also be frozen.
Once chilled, you can heat them up for a few seconds in the microwave to turn them softer and melt the chocolate.
Feel-free to add some chopped walnuts or almonds to the batter. Before baking, you can also garnish the top of the brownies with peanut butter or fruit jam (make a swirl within the batter), chopped nuts, shredded coconut, vegan white chocolate chips, sliced strawberries, etc.
