This super easy passion fruit syrup is so flavorful and amazing to use in all sorts of tropical drinks and desserts! Requires only 2 ingredients and done within 5 minutes.

¼cupfresh passion fruit juice (about 4-5)or frozen, see notes
⅓cupwater
⅓cupmaple syrup or agave nectarsee notes if using granulated sugar
Instructions
Place a fine mesh colander over a medium bowl and slice 4-5 passion fruits in half. Then, scoop the flesh out of the fruits directly into the colander using a small spoon. Use the back of the spoon to press on the seeds to help extract the juice. You should end up with about ¼ cup.
In a storing jar, combine the passion fruit juice, sweetener and water. Stir well and taste to adjust flavor. I also like to add some of the seeds back to the syrup for a nice pop of contrast.
Use right away to make drinks or pour over oatmeals, smoothie bowls, cakes, etc.

Can be stored in the fridge for about 2 weeks.
Can also be frozen (use an ice cube tray) and then add to tropical smoothies or smoothie bowls. Or thaw for 1 hour and use to make drinks!
To make it using frozen passion fruit: thaw a few cubes to have about ¼ cubes of puree once thawed. Then, simply combine with the water and sweetener (no need to strain).
To make it using granulated sugar: combine ⅓ cup of water with ⅓ cup of granulated sugar in a small saucepan and heat up while stirring until all dissolved. Extract the passion fruit juice as described. To make the passion fruit simple syrup, combine the water-sugar mixture with the passion fruit juice and chill before using.
