This easy piña colada mocktail is so creamy, fruity and full of flavor. It features frozen pineapple, coconut cream, pineapple juice and a touch of lime juice, and this virgin drink is also completely dairy-free and even healthy! Great to sip on a hot afternoon or to serve at parties any time of the year to bring a fun tropical vibe.
Pour the pineapple juice (or water) to a blender and then add the canned coconut cream, the frozen pineapple and lime juice and blend until very smooth.
Pour into a large serving glass (or 2 small ones) and decorate with pineapple wedges and maraschino cherries. Enjoy right away!

Notes
You can adjust the consistency of the mocktail by adding more frozen pineapple for a thicker drink or more pineapple juice to thin it out (especially if your blender struggles to blend super thick consistencies).
Do not use sweetened coconut cream. You want an unsweetened canned coconut cream, not the processed one coming in a bottle. If you want your mocktail to be sweeter, then add a little extra sugar or maple syrup to the blender.
This mocktail is best when using 100% freshly pressed pineapple juice, ideally organic. The flavor simply is better!
You can turn this recipe into a pitcher or make a few more mocktails by doubling or tripling the recipe. More than that might not fit in the blender, but you can make a few batches.
