This healthy watermelon mojito mocktail makes for a perfect vibrant summer drink to cool off on a hot day. Features fresh watermelon, limes, mint and sparkling water... so simple, stunning and delicious!
1-2tbspsweetener (maple syrup, agave nectar or granulated sugar)optional

Instructions
Make the watermelon juice
Blend the watermelon, lime juice, mint and sweetener (if using) until smooth. Transfer to a jar and place in the fridge to chill for a few hours or use right away (you should end up with about 1 ¼ cup of watermelon juice). This can be made ahead and kept in the fridge until your guests arrive!
Make the mocktail
When ready to serve, muddle a few extra leaves of mint with a slice of lime at the bottom of your glass and add about ½ cup of the watermelon mixture over (you should have enough to make 4 glasses). Then, add a few ice cubes and pour some sparkling water over (about ½-¾ cup per glasses). Taste and add more sweetener if needed and some more pieces of watermelon and slices of lime to decorate. Store the watermelon juice in the fridge for up to 4 days. Once you make the mocktail with the sparkling water, then enjoy right away to ensure your drink is nicely bubbly.
Feel free to add more fruits to your mocktail! Strawberries, blueberries, raspberries are all great ideas. Simply muddle some fruits alongside the slice of lime and extra mint at the bottom of your drink before pouring the watermelon juice and sparkling water over.
