These healthy jackfruit burger patties are SO flavorful and packed with an amazing texture. Includes "meaty" jackfruit, spices and herbs, they are quick and easy to make, which makes this recipe a perfect weeknight dinner! 100% vegan, gluten-free and soy-free.
14ozcanned jackfruit (in brine, not syrup)rinsed, drained and pat dried with a towel
⅓cupyellow onionroughly chopped
1clove of garliccrushed or roughly chopped
½tspchili powder
½tsponion powder
½tspsalt
1handful fresh herbs (about ½ cup)I used a mix of cilantro and parsley
⅓cupchickpea flouror more if needed to help the patties hold well
Instructions
Line a baking sheet with parchment paper and pre-heat the oven to 400º.
Start by prepping the jackfruit: rinse well under water, drain and then pat dry using a towel.
Transfer the jackfruit to a food processor and add the onion, garlic, spices and herbs. Process/pulse until the ingredients are broken down but still coarse in texture.
Then, add the chickpea flour to the food processor and pulse a few times to combine. Use a spatula to finish up combining and then use your fingers to press some of the mixture to check for texture: you want the texture to be slightly moist and hold well together. Add a little more flour if needed.
Divide and shape the mixture in 3 equal patties and transfer them on the prepared baking sheet. Bake for 20 minutes, flipping halfway through. Serve in burgers with your favorite fixings.

Keep leftover burger patties in an air-tight container in the fridge for 3-4 days. Reheat in a pan for a few minutes on each side or in the oven at 350º for about 7-8 minutes.
Other ways to flavor the patties includes curry powder, fresh basil, spicy cayenne pepper, jalapeno, etc.
