These strawberry overnight oats are SO delicious and such a perfect make-ahead healthy breakfast. It is super creamy, slightly sweet and filled with protein and fiber to help you stay full until lunch time.

Stir all the ingredients together in a jar until the almond butter is combined.
Transfer to the fridge and let sit for at least 2 hours before enjoying, but preferably for 8-12 hours (or overnight). The raw oats will soak up on the liquid and soften during that time. Enjoy cold with toppings (more strawberries, vegan yogurt, nuts, coconut milk, etc), if desired.
If making this overnight oatmeal ahead of time (more than 24-48 hours ahead), then simply let the strawberries sit on top of raw oats mixture instead of incorporating them (or leave the fruits out until ready to eat). Your raw oatmeal will stay fresh longer that way.

Storage: this overnight oats can be kept in the fridge up to 5 days before enjoying (keep the strawberries out until ready to eat if storing for more than 2 days).
For a gluten-free breakfast: make sure to use gluten-free certified raw oats.
For a nut-free breakfast: swap the almond butter for sunflower or pumpkin seed butter and use oat milk.
For a no added sweetener recipe: omit the maple syrup and add ½ of a mashed banana just before eating.
