Vegan Ramen with Kimchi and Shiitake

This recipe is quick and easy to prepare, but also loaded with flavor.

Perfect weeknight dinner and the broth can be made ahead.

Cook the onion, ginger, garlic with the shiitake.

Then, add the soy sauce, red curry paste, kimchi and broth. Simmer for 5-10 min.

Add the raw ramen and the miso paste (dissolve in a little water first).

Also cook the bok choy right into the broth. The meal is ready when the noodles are tender.
